- Soil: The vineyard sits in the Ñipas Estate. With basaltic sand soils, from fluvial-alluvial deposits.
- Viticulture: The harvest is only of the own grapes from vines that are more than 35 years old. These vines are cultivated organically, using traditional methods involving both human labor and animal assistance. The grapes are carefully hand-selected from a 3-hectare Cinsault plot in our vineyard.
- Elaboration: Vinification in cement presses, stored in second-use oak barrels for 12 months, and then bottled in underground cellars until today.
- Tasting notes: Appearance: The wine displays a rich terracotta red color. On the nose, it presents a complex bouquet of leather, cinnamon, cassis, and dried herbs, offering a sensory journey. On the palate, the wine showcases incredibly refined tannins, balanced by good fruit sweetness and excellent acidity. The structure is fantastic, revealing a smooth and elegant mouthfeel that culminates in a long and satisfying finish.
- Ideal service temperature: 12°C to 14°C, To enhance its nuances, slow aeration prior to serving is recommended, allowing the wine to open up and reveal its full potential.
- Service technique: Serve this wine at the recommended temperature to allow it to oxygenate in a glass or decanter.
- Pairing:Ideal to accompany a roast lamb.
