Viticulture: The harvest is only of the own grapes from vines that are more than 35 years old. These vines are cultivated organically, using traditional methods involving both human labor and animal assistance. The grapes are carefully hand-selected from a 5-hectare Cabernet Sauvignon plot in our vineyard

Elaboration: The vinification process involves the use of cement presses, followed by aging in second-use French oak barrels for a period of 18 months.Finally, the wine is bottled and stored in our underground cellars until the present day.

Tasting notes: This wine exhibits a captivating terracotta red color, with a bouquet of enticing red fruit aromas. The aromatics reveal notes of luscious cherry liqueur, rich strawberry jam, succulent ripe grapes, and juicy cherries. Subtle undertones of vanilla and tobacco add complexity to this aromatic symphony. In addition, alluring lactic notes come to the fore, evoking sensations of creamy caramel and blackberry yogurt. As the wine breathes, delightful herbal nuances of chamomile and thyme intermingle with sweet hints of honey, propolis, and beeswax. This wine exhibits a harmonious balance, showcasing vibrant acidity and a consistent aromatic profile. Its palate is characterized by a silky, rounded, and full-bodied texture, complemented by medium to high tannins. The wine’s body and finish are elegantly rounded and silky, with pronounced and fruity acidity that indicates it is at its peak of expression.

Ideal service temperature: 16º a 18º Celcius, allowing its flavors and aromas to fully express themselves. To enhance its nuances, slow aeration prior to serving is recommended, allowing the wine to open up and reveal its full potential.

Pairing: An ideal companion for meat lovers, particularly when paired with beef and pork dishes, as well as seasoned preparations with medium to high fatness. It also pairs wonderfully with savory cured meats like salami and serrano ham.
